  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup small pasta (like ditalini or elbows)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup spinach (or kale, if you prefer)
  • Grated Parmesan cheese, for topping
  • Crusty bread, for serving

Directions:

  1. Cook the Veggies
    Heat the olive oil in a big pot over medium heat. Add the onion, carrots, and celery, and cook for about 5 minutes until they start to soften.
